Blueberry Power Balls Recipe

Ingredients

YIELD: 36 small balls (approx. 30g each)

  • 2 cups raw nuts (we like cashews & almonds)
  • 1 cup dates
  • ¼ cup coconut oil (infused or plain)
  • ½ cup dried blueberry flour (or any nut/seed flour)
  • ½ cup dried blueberries
  • 1½ tsp vanilla extract (or seeds of 1 vanilla bean)
  • 1½ tsp lemon zest
  • 1½ tsp juice of half a lemon
  • ¼ tsp sea salt
  • A small bowl of toppings (e.g. cacao nibs, coconut shavings—your call)

Instructions

  1. Add nuts to a food processor and pulse on high until the texture is consistent.
  2. Add the dates, flour, dried blueberries, and coconut oil. Process until you have a thick, sticky mixture.
  3. Add the lemon zest, lemon juice, and vanilla extract. Blend again until everything combines into one large sticky ball.
  4. Using clean hands, divide the mixture into smaller, bite-sized balls (about 2 tablespoons each).
  5. Roll each ball in your chosen toppings.
  6. Store in the fridge for up to 1 week or freeze for longer shelf life.
